Monk: With the recent closures of Richard’s Bar-B-Que in Salisbury and Rick’s Smokehouse as well as Smiley’s BBQ in Lexington, John Tanner shares his updated list of top 10 Piedmont barbecue restaurants.

Off the top, I haven’t tried Dickie Do’s in Haw River or Real Q in Winston-Salem (though I should remedy that), so can’t comment on those. But the rest of the joints on the list I have no qualms with, though while I enjoyed both I was surprised that he liked Clark’s Barbecue in Kernersville and College Barbecue in Salisbury so much.

The qualm that I do have is the lack of inclusion of The Barbecue Center in Lexington, though John acknowledges he may be in the minority here and links to his story for reference on his experience and thinking. Regardless, John Tanner is a well-trusted source on barbecue and NC barbecue in particular, so head on over and check out his list.

Linkdown: 2/2/22

Barbecue fests are back, baby! Earlier this week, both the BBQ Fest on the Neuse in Kinston, NC and the Houston Barbecue Festival announced separately that they were both back in spring 2022.

This is after other festivals announce plans to come back strong in 2022, notably Memphis in May, Hogs for the Cause, Jiggy with the Piggy, and Aaron Franklin’s Hot Luck Festival.

Plus the successful debuts of the Pinehurst Barbecue Festival and Holy Smokes in 2021. And finally, it looks like The Barbecue Festival should be back in 2022 as well.

Fingers crossed that we get on the other side of the omicron variant and things can finally go back to relative normalcy.

Friday Find: How a Vietnamese Pitmaster is Bringing New Flavors to Texas Barbecue

Monk: Houston-based Khói Barbecue is a “Viet-Tex” pop-up that melds Vietnamese flavors with Texas barbecue in dishes like brisket pho or beef ribs marinated with kalbi (which is technically Korean) or a Vietnamese bò lá lốt sausage made from brisket trimmings. Description: At Khói Barbecue, brothers Don and Theo Nguyen use the Vietnamese ingredients and cooking methods from their childhood to influence their Texas Barbecue pop-ups, creating dishes like brisket pho and smoked chicken rice & yuzukoshō.

– So Aaron Franklin doesn’t actually eat Texas barbecue and might actually prefer Carolina barbecue?

“I don’t really know. I don’t eat barbecue,” he says. I laugh nervously, but Franklin doesn’t waver. “I don’t eat that stuff, but I love to cook it. If I’m in a special place like up in the Carolinas hanging out with Sam Jones (whose family has been in the BBQ biz for more than 70 years), I’m absolutely going to get a pork sandwich. If I’m hanging out with Rodney Scott (a world-renowned BBQ chef from Charleston), I’m absolutely going to get some of that pulled pork. Time and place, but as far as scenes and stuff, I don’t really keep up with it. My concentration is right here.”

Leon said there is some pressure with running a barbecue restaurant in Davidson County due to the county’s barbecue reputation. He added that if the restaurant does a poor job, it not only reflects on the restaurant but the other restaurants as well, because Lexington barbecue is a style and one restaurant’s success means success for the others in the county.
